Bacon Wrapped Broccoli with Balsamic Vinegar & Honey

An appetizer that is guaranteed to surprise your guests. Delicious and easy to prepare.

Ingredients (for 4 persons)

  • 1 bunch broccoli, cut into florets
  • 100 gr. sliced bacon, cut in half
  • 25 gr. chopped blanched almonds
  • 2 tbs Balsamic vinegar
  • 1 tbs honey
  • 5 tbs extra vergine olive oil
  • salt & pepper

Preparation

  • Boil the broccioli in slightly salted water to cover until crisp-tender, about 8 minutes. Then rinse under cold water, so as to keep the green colour. Drain carefully.
  • Roast the chopped almonds in a dry frying pan till golden brown.
  • Preheat the oven grill to the highest setting.
  • Wrap the florets in the bacon and secure each bundle with a toothpick. Place them on a baking tray covered with baking paper. Bake under a hot grill till the bacon is crisp (approximately 5-7 minutes), turning once.
  • For the dressing, mix the vinegar, honey and salt & pepper to taste. Add the olive oil slowly, while continuing to whisk.
  • Serve the bacon packets in a big dish with the almonds and the dressing on top.
