This savoury pie is similar to a traditional “quiche”. With a fresh green salad and a light wine it’s optimally suited to nice warm sunny days. The recipe is originally vegetarian, but for variation it can also be prepared with finely sliced bacon.
Ingredients (for 4 persons)
- 2 red paprikas, in broad ribbons
- 150 gr haricots verts (long green beans)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 ts Herbes de Provence (dried)
- 3 eggs
- 125 gr flour, sieved
- 250 ml milk
- 125 gr soft goat cheese
- 1 tbs olive oil
- 75 gr black olives, halved
- quiche-dish, 24 cm diameter, lightly greased
Preparation
- Halve the green beans and boil in slightly salted water to cover until crisp-tender.
- Heat the oil in a frying pan and lightly fry the onion, garlic and herbs for 5 minutes. Add paprika, beans & olives.
- Pre-heat the oven to 175° C. Whisk the eggs with salt & pepper till foamy. Add flour, then milk, whisk till smooth.
- Pour a thin layer of batter into the quiche-dish and place it on the middle rack of the oven for approximately 10 minutes.
- Take the dish out of the oven. Add the vegetables, distributing them evenly. Crumble the cheese on top, then pour the rest of the batter over the dish.
- Bake in oven for 40-45 minutes. Leave the pie to cool down slightly, then cut & serve.
