Fried Shrimps with Garlic

For this recipe I like to use deepfrozen tiger prawns or scampi. As a starter, it serves 4 people; with bread and a salad it will also serve as a main course for 2.

Ingredients

  • 12 scampi or 20 tiger prawns, raw, shelled but with tail
  • 4 cloves of garlic
  • 3 tbs olive oil
  • salt & pepper
  • 4 tbs chopped parsley (fresh)
  • 4 tbs chopped basil (fresh)
  • 1 tbs balsamic vinegar or lemon juice

Preparation

  • Peel the garlic and cut into very fine slices.
  • Heat the oil in a non-stick frying pan or wok and fry the shrimps 1 minute on each side. Season to taste.
  • Add the garlic and the herbs and stir fry for an additional 2-3 minutes till the shrimps are cooked through and pink.
  • Serve the shrimps with a sprinkling of vinegar or lemon juice.

Tip

combines very well with Roasted Tomatoes with Olives & Basil
