For this recipe I like to use deepfrozen tiger prawns or scampi. As a starter, it serves 4 people; with bread and a salad it will also serve as a main course for 2.
Ingredients
- 12 scampi or 20 tiger prawns, raw, shelled but with tail
- 4 cloves of garlic
- 3 tbs olive oil
- salt & pepper
- 4 tbs chopped parsley (fresh)
- 4 tbs chopped basil (fresh)
- 1 tbs balsamic vinegar or lemon juice
Preparation
- Peel the garlic and cut into very fine slices.
- Heat the oil in a non-stick frying pan or wok and fry the shrimps 1 minute on each side. Season to taste.
- Add the garlic and the herbs and stir fry for an additional 2-3 minutes till the shrimps are cooked through and pink.
- Serve the shrimps with a sprinkling of vinegar or lemon juice.
