A striking little dish, prepared largely in the microwave. Your guests will be amazed.
Ingredients
- 1 red paprika
- 2 sprigs of basil
- 2 eggs
- 4 tbs cream
- 2 tbs melted butter
- 75 gr. grated Parmesan
- salt & pepper
- Tabasco
- 30 gr. rucola
- 100 gr. romaine lettuce
- 2 tbs extra vergine olive oil
Preparation
- Remove the seeds from the paprika. Cut one half of the paprika in fine slices, chop the other half up. Chop the basil.
- Whisk the eggs with salt & pepper, cream and 1 tbs butter. Add the cheese, chopped paprika, basil & Tabasco to taste.
- Thinly grease 4 coffee cups with the rest of the butter. Divide the egg mixture over the cups.
- Heat in microwave for approximately 6 minutes at 3/4 capacity (525-600 W). Allow to set for another 2-3 minutes.
- Divide the (washed & dried) lettuce & rucola over 4 plates. Add the paprika slices. Dress the salad with a sprinkling of olive oil & vinegar.
- Turn the mini souffles out onto a saucer and set one on each portion of salad. Serve with (French) bread.
