Easy to do & quite yummy. Turkey can get quite dry but this recipe is 100% fail-safe.
Ingredients (for 2 persons)
- 100 gr. mozzarella
- 30 gr. butter
- 200 gr. turkey (fillet)
- salt & pepper
- 2 tbs pesto
Preparation
- Drain the mozzarella and cut into slices of 5 mm.
- Cut the turkey fillet in two pieces, wrap in cling film and batter till evenly thick (thus creating a schnitzel!).
- Heat the butter in a non-stick frying pan and quickly fry the fillets brown on both sides. Season with salt & pepper.
- Take the pan off the fire and cover the schnitzels (while still in the pan) with half of the pesto, then put the mozzarella on top.
- Put a lid on the pan and put it back on the fire.
- Transfer the schnitzels onto a warm dish as soon as the cheese has melted.
- Add the rest of the pesto to the remaining frying-fat with 2 tbs of water. Stir and bring to the boil.
- Serve the schitzels with the gravy.
Tip
Great with Roasted Tomatoes with Olive & Basil and a simple pasta.
