Turkey with Pesto & Mozzarella

Easy to do & quite yummy. Turkey can get quite dry but this recipe is 100% fail-safe.

Ingredients (for 2 persons)

  • 100 gr. mozzarella
  • 30 gr. butter
  • 200 gr. turkey (fillet)
  • salt & pepper
  • 2 tbs pesto

Preparation

  • Drain the mozzarella and cut into slices of 5 mm.
  • Cut the turkey fillet in two pieces, wrap in cling film and batter till evenly thick (thus creating a schnitzel!).
  • Heat the butter in a non-stick frying pan and quickly fry the fillets brown on both sides. Season with salt & pepper.
  • Take the pan off the fire and cover the schnitzels (while still in the pan) with half of the pesto, then put the mozzarella on top.
  • Put a lid on the pan and put it back on the fire.
  • Transfer the schnitzels onto a warm dish as soon as the cheese has melted.
  • Add the rest of the pesto to the remaining frying-fat with 2 tbs of water. Stir and bring to the boil.
  • Serve the schitzels with the gravy.

Tip

Great with Roasted Tomatoes with Olive & Basil and a simple pasta.
