Puff Pastry Pie with Three Cheeses and Pesto

A nice simple savoury pie. The recipe is quite basic but can be elaborated to include various other ingredients. As a starter, it will serve 4 people, with a salad it easily serves as a main course for 2.

Ingredients

  • 4 pieces of puff pastry
  • 2 eggs
  • 4 sundried tomatoes in oil
  • 1 spring onion
  • 125 gr. mozzarella
  • 150 gr. ricotta cheese
  • 50 gr. Parmesan, grated
  • flour
  • olive oil
  • black pepper

Preparation

  • Drain the tomatoes on kitchen paper, then cut into small dices. Slice the spring onion into small rings. Dice the mozzarella.
  • Beat the eggs with the pesto, add the 3 cheeses (mozzarella, ricotta & Parmesan) and the tomatoes and onion. Season to taste.
  • Pre-heat the oven to 220° C. Gently roll out the pastry on a dusted work surface. Perforate the pastry several times with a fork, then put some filling on one side of each piece. Fold the pastry around the filling and seal each package carefully (for this you can brush the edges with the leftovers from the beaten egg, then press the edges together with a fork).
  • Bake the pies on baking paper in a hot oven for approximately 25 minutes, then serve.
