Light & healthy - and easy to make! Great with mashed potatoes and steamed green veggies.
Ingredients (for 4 persons)
- 4 chicken breasts (without skin)
- 1 untreated (bio) lemon
- 3 cloves of garlic
- 2 tbs butter
- 2 tbs olive oil
- 3 tbs fresh parsley, chopped
- salt & pepper
Preparation
- Slowly heat the butter & the oil in a frying pan. When the butter’s brown, add the chicken and bake for at least 10 minutes on each side.
- Meanwhile, finely slice the garlic and scrape the lemon with a zester. Squeeze one half of the lemon.
- Take the chicken out of the pan and keep it warm under alu foil. Fry the garlic slices for 30 seconds in the remaining fat. Then add 2 tbs of water, the lemon zest and juice and the parsley. Warm through for 1 minute. Season to taste.
- Serve the chicken with the garlic mixture on top.
Tip
To get as much juice as possible from a lemon: heat the fruit for 10 seconds in the microwave at max power. (This does not affect the taste.)
